Team 1 : Autochthonous microbial strains, characterization and food interest
Presentation
The team’s main mission is the identification and characterization of new microbial strains of food interest. This team was able to support the local agri-food industry through the development of research projects that resulted in the consolidation of the strain bank and the expansion of the catalog nationwide. Today the team is reorienting itself towards the promotion of native species and the development of biotechnological processes for production and processing in agri-food industries with the main objective of meeting the needs and expectations of the socio-economic sector.

Team 2 : Biomolecules of food interest
Presentation :
The team is interested in the extraction of biomolecules of food interest, their characterizations and their applications in the food industry. The team's research projects mainly focus on the application of omic technologies for the evaluation of natural molecules as well as their possible applications in the food industry. The study of food proteins and enzymes occupies an important place in the research work carried out within the team.

Presentation :
The team is interested in studying the kinetics of reactions catalyzed by enzymes, in order to identify those with the best catalytic properties for specific applications in the food industry. Our work is part of the field of modern enzymology, which allows the interaction between organic chemistry, biochemistry and bioinformatics, thus allowing an interdisciplinary approach.

Biotechnology is the essential support to accompany research in the field of food sciences and nutrition. Our research team works on the evaluation of the nutritional, hygienic, techno-functional and sensory qualities of food formulations, on the application of biotechnology in the field of quality control and authentication of food products as well as on the study of functional foods and the search for natural substitutes for food additives that are more satisfactory for both consumers and food producers.
